…Recently, Huang and his research group at the National University of Singapore used legume protein to develop better seafood mimics. And they replicated the flakiness and mouth feel of real fish by 3D printing a protein-based ink with a food-grade 3D printer. Depositing the edible ink layer by layer created different textures, some fatty and smooth and others fibrous and chewy, in a single product.

“We printed salmon filets with protein from red lentils because of the protein’s color, and we’ve printed shrimp,” says Huang. “Now, we wanted to print something else interesting with the potential for commercialization — calamari rings…”

(ME: Personally, I favor just using plant protein and not mimics because of additives and artificial flavorings, as well as added sugars and salts but keep track of developments for others and to track if they can mimic meat healthfully.)

Raid on Kansas newspaper was troubling and possibly illegal – Los Angeles Times

…It was the sort of conduct one usually associates with totalitarian governments: Law enforcement officers swarm a newspaper office and confiscate computers, servers and cellphones of reporters and editors. Yet this raid took place not in a faraway autocracy, but in a small town in Kansas, despite a federal law prohibiting such searches in most cases.

On Friday, police acting on a warrant searched the offices of the Marion County Record, a weekly newspaper with seven employees and a circulation of about 4,000. Simultaneously, officers searched the home of Eric Meyer, the publisher and co-owner, seizing computers, his cellphone and the home’s internet router, according to Meyer. Meyer’s 98-year-old mother — a co-owner of the newspaper who lived with him — collapsed and died Saturday. Meyer blamed her death on the stress of the raid on their home…

Amazon removed from key list of climate-conscious companies – Los Angeles Times

…The Science Based Targets initiative, a United Nations-backed entity that validates net-zero plans, has removed Amazon from its list of companies taking action on climate goals after the tech behemoth failed to implement its commitment to set a credible target for reducing carbon emissions.

Amazon said in 2019 that it would eliminate or offset all of its carbon emissions by 2040, and a year later the company committed to submitting its goals through SBTi’s verification process. The retailer and cloud-computing company is working to electrify its last-mile vehicle fleet and remove fossil fuels from its electricity sources, but hasn’t offered a detailed road map for how it plans to eliminate the other sources of carbon from its business…
