Apple Butter Bars

What’s Cooking in Gail’s Kitchen? The Food Whisperer: Apple Butter Bars! What if I told you there was no “butter” in apple butter? Would you wrinkle your brow and say, “Whaaat?” It’s true. Apple butter is made by slow-cooking apples a long time until the sugar content caramelizes, giving it a deep brown color. I skipped the homemade process by choosing to purchase an organic brand made by one of my favorite country restaurants. You can, too, by visiting local farmers who are more than willing to share their bounty this time of year. It’s Applelicious!

APPLE BUTTER BARS

Ingredients:

3/4 cup butter

1 cup sugar

2 cups flour

1 teaspoon sea salt

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1 1/2 cups natural apple butter

1 gala apple, peeled and chopped

1/3 cup peanuts, chopped

1/4 cup brown sugar

Mawa peda-Diwali special!

LITTLE CHEF’S APRON

Hi everyone! I hope you are doing great!! Eating pedas, barfi , and all other kinds of sweets have to be one of my favourite part of Diwali.

Deciding the menu, getting the ingredients and photographing them, has been extremely fun!!

I hope your preparations are going wonderful as well!

Starting off with today’s recipe,

Ingredients required:

200 gm khoya/mawa

1/3 cup powdered sugar

4 tbsp chopped nuts of choice

1 tsp ghee

1 tsp cardamom powder

Directions:

First, add ghee to a pan and let it melt. Then add crumbled khoya into the pan.

On low flame, keep mixing and cooking the khoya for 5 minutes. It will start to melt and leave the pan.

Add the nuts and cardamom. Mix well.

Keep cooking until slight golden brown and the mawa has become smooth.

Then, transfer it to a bowl and let cool for 5 minutes.

Gnocchetti sardi con i ceci neri

Un’insolita varietà di ceci che desta curiosità per il suo colore e per il contrasto che può regalare al piatto che andrete a realizzare. Dal loro alto contenuto proteico e ricchi di vitamine quali C, B e K, i ceci neri sono largamente prodotti nella zona del materano e della Murgia Barese.

Questa varietà risulta essere più saporita rispetto alla tradizionale e molto più ricca di ferro e fibre.
Qui li andremo ad accostare a dei fantastici gnocchetti sardi trafilati al bronzo, rendendo originalissima la tradizionale pasta e ceci.

Ingredienti (per 2 persone):

180 g di gnocchetti sardiinthenameofseitan-150x150

100 g di ceci neri

Passata di pomodoro (3 cucchiai)

1 spicchio d’aglio privato dell’anima

½ cipolla

1 carota piccolina

1 costa di sedano

Alloro (una foglia)

Salvia (una foglia)

Rosmarino (qualche ago)

Wondering Wednesdays, Do Better, Chapter 6 on steps to get to Phase III

Context, Thought, and Learning: ShiraDest Offers Project Do Better

This post is the rough draft of  Chapter 6, section III, for my non-fiction WiP, Do Better, formerly titled Baby Acres/Floors.  

Putting a floor on poverty so that every baby born can have a safe childhood.

Once again, by way of disclaimer, the overall goal is now to explain why we need both equity and justice, and why in 4 phases.  This chapter is part of showing what Phases I-IV could look like as potential roadmap for a fully inclusive society for all of us.  This vision is laid out in the hope that All HumanKind  will eventually have each person’s basic needs  met, without taking anything from anyone, and without violence, intimidation, nor coercion of any kind.
