        How high does your level of gratitude reach? Now everyone has written about some angle of gratitude, but to grow in thanksgiving, you have to let some things go to see the big picture, in order to rise, like mercury in a thermometer. Life has thrown some curve balls that even astonish Major League Baseball pitchers. Either these curve balls will knock us out, or we focus and fire away by hitting them head-on and out of the park.

        The altitude of our gratitude depends on our attitude of appreciation for gifts that are not simply based on materialistic gains but on how stronger we get in the midst of adversity. Plant based proteins best investment for climate

According to a recent report from the Boston Consulting Group, a dollar invested in alternatives to animal products provides a far better return to the climate than electric vehicles and other initiatives.

Animal agriculture represents around 15 percent of global greenhouse gas emissions, equivalent to the whole transportation sector. Since a lot of those emissions come in the form of methane, a more potent but shorter lived greenhouse gas, any reduction in animal products now will have long lasting benefits.

By 2035, they estimate that alternatives to animal proteins (foods made from plants or animal cells) will reach 11 percent of market share. Venture capital reached $5 billion in 2021.

If we remain on track for an 11% share for alternative proteins by 2035, we will see a reduction of 0.85 gigaton of CO2 equivalent (CO2e) worldwide by 2030—equal to decarbonizing 95% of the aviation industry. In…

I really like this word.

Considerate : (a) careful not to cause inconvenience or hurt to others (b) showing careful thought

This for me is an action word that demonstrates grace and kindness to the others…be it friend or stranger.

One day I was at a close friends house and we were sitting outside. I had put my hat on the ground and I asked her if she could pick it up for me; my back was unable to bend properly that day.

Well, I will never forget what happened next. She picked up my hat and before she handed it to me she brushed off any dirt that might have been on it.

It was a small gesture but it was very considerate.

If I am acting reckless or being selfish and self centered…..that energy is just swirling all around me and the others.

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Splatter Pan Roasted Peppers! There’s something comforting about roasted vegetables. Perhaps it’s the amazing flavor as a result of dry oven heat. Ever notice that slightly caramelized texture? Sometimes it results in a toasted nutty-like flavor. Sweetness piques, especially in tomatoes. The soft brown garlic bulbs surprised me most of all. I mashed one against the roof of my mouth. The raw bitterness had been replaced with a savory sweetness that brought sheer pleasure to my taste buds. No wonder people say food can produce a seductive spark. Am I the last one to discover this about roasted garlic?
