What’s Cooking in Gail’s Kitchen? The Chow Down: Positively Popular Poutine! While traveling to Canada recently, I was taken aback by a friendly waitress who recommended a very popular dish on the menu made with crispy French fries, fresh cheese curds, and rich brown gravy. She called it Poutine. Like a deer in the headlights, I was completely frozen at the thought. So I shook my head no, thanked her, and ordered my fries plain. By the end of the meal I was convinced I had missed out on something spectacular. Practically every restaurant listed Poutine as their specialty. Some Poutine platters were loaded with bacon, others chunk lobster, beef brisket, jerk chicken, or sautéed veggies. One place even boasted “Award Winning Poutine” and stayed open til 4:00 a.m. just to meet the late-night cravings of college students. Maybe this dish will catch on, after all.

A Tale of Three Whales: My Humpback Encounter

It was so good to retell my story of three humpback whales, whom I met some miles off the coast of California, a few years back. That entire, magical morning came back to me quite vividly.

I got a nudge to do this from the United Nations Environment Programme (UNEP) office in Kingston (which is also the Cartagena Convention Secretariat), who had seen my tweets about their Marine Mammal Month campaign. This June and until July 7. UNEP has been aiming to raise awareness about marine mammals in the Caribbean (yes, we have orcas and whales and manatees) – which as we noted on World Oceans Day this year, face a whole range of threats (here are some older thoughts and quoteson World Oceans Day). Some counties in Missouri have vaccination rates well below 40%. Hospital administrators say intensive care unit beds are once again filling, this time with young, unvaccinated adults.

In several states, including Missouri, Iowa, Kansas, Nebraska, Colorado, Montana, North Dakota, South Dakota, Utah, and Wyoming, the Delta variant is responsible for at least 50% of new cases.

Cherry Pie Bars

These simple and delicious bars are sure to please any pie fan. Although cherry is our personal favorite, the recipe can be adapted for other fruit fillings as well. From blueberry to apple to peach, the options are abundant!

STEP ONE – Preparations

  1. Preheat the oven to 350°F.
  2. Lightly spray a 9-inch metal baking pan with canola spray.
  3. Take out a stick of unsalted butter to soften.
  4. Get out a stand mixer.
  5. Set up a cooling rack.

STEP TWO – Make the Dough

Ingredients:

1 stick unsalted butter
1 cup white sugar
2 large eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon fine sea salt

Instructions:

  1. In the stand mixer, cream the butter and sugar on medium speed for 3 minutes.
  2. Add the eggs and vanilla and mix until smooth.
  3. Add the flour and salt and stir to incorporate without overmixing.
