I find it easier to cook vegetarian, if I don’t try to imitate meat. I don’t want to eat meat, why should I imitate meat products? Though it might be a good idea for people, who need to drop meat from their diet for health reasons, but not really are vegetarians.

Me too but lots of former met eaters still like things that are ‘like’ meat in texture or taste – so I share those recipes for them.

Yes that’s what I meant, for them it is easier to make the transition with those products. The majority of products is made of soya though, not everybody can digest that easily, we can’t. We prefer Qorn or seitan. Lately they have begun here to use pea and lupin protein, which is quite tasty too, but all of this is very processed.

Being highly processed is a problem, so I stick to my own recipes. Here is a recipe for seitan – https://www.vegetariantimes.com/recipes/homemade-seitan/ – I may try this one.

I used to make seitan myself, but it is hard on the hands, I can’t do it anymore.

I used to kneed bread every other day when I was growing up. I only have aches in one thumb, so I may give seitan a try

I use a kneading machine for bread now. I have to be careful with my hands, so that I still can play the keyboard.
