“Individuals who were not infected with the Epstein-Barr virus virtually never get multiple sclerosis,” Prof Alberto Ascherio, from Harvard, told me.

“It’s only after Epstein-Barr virus infection that the risk of multiple sclerosis jumps up by over 30-fold.”

The team checked for other infections, such as cytomegalovirus, but only EBV had a crystal clear connection with the neurodegenerative disease.

(Epstein-Barr virus (EBV) is so common that nearly all of us can expect to catch it during our lives. Most of us won’t even notice, but the virus is famous for “the kissing disease”, which is also known as either glandular fever or mononucleosis.)

Torta di carote

Ingredienti: farina di mais sottile 100gr, farina bianca 150gr, carote 400gr, mandorle 150gr, 4 uova, 6 cucchiai di miele, burro 100gr, latte, 1 bustina di lievito in polvere, 1 limone, liquore limoncello, zucchero a velo, sale.

Esecuzione: montare i tuorli d’uovo in una ciotola, unirvi le carote grattugiate, il miele, la scorza grattugiata del limone e, sempre mescolando, incorporare poco alla volta la farina di mais, la farina bianca, le mandorle finemente tritate e il burro fuso ma freddo. Aggiungere ancora un bicchierino di limoncello, il lievito sciolto in poco latte e infine gli albumi montati a neve ben ferma con un pizzico di sale, mescolando delicatamente fino ad ottenere un impasto liscio ed omogeneo. Versarlo in una tortiera imburrata e infarinata o, rivestita con carta da forno, e cuocere la torta in forno già caldo a 180° per 45 minuti circa.
