Vegetarian Chili

This chili recipe is easy, versatile, loaded with nutrition, and so satisfying on a cold day. You can adjust the ingredients to your taste by adding in your preference of vegetables, beans, cheeses, and spices.

STEP ONE – Start the Chili

Ingredients:

1 tablespoon of extra-virgin olive oil
1 minced medium red onion
3 minced garlic cloves
Salt and pepper
Chili powder
Cumin
Cilantro
Paprika
Dash of hot sauce
Juice of 1 lime
1 8-ounce can of tomato sauce
1 15-ounce can of diced tomatoes
1 15-ounce can of black beans, drained and rinsed
½ cup of lentils
1 cup of vegetable broth

Instructions:

  1. Heat the oil in a large pot over medium heat.
  2. Add in the onions and salt and pepper and cook for 5 minutes.
  3. Add in the garlic, chili powder, cumin, and cilantro and cook for 1 minute.

Saint Joseph’s College closes campus after surge in COVID-19 cases – Portland Press Herald

“COVID-19 doesn’t care if most of us have agreed to be safe. It looks for openings, and it has now found some here on campus,” the college said in a statement. “A handful of students have decided not to keep the commitment to our community through their own personal choices. The actions of some are affecting the conclusion of the semester for all.”

  • Gov. Michelle Lujan Grisham ordered, beginning Monday, a reimposition of the stay-at-home order. This means all non-essential businesses will have to close. The state had high numbers of cases, deaths and hospitalizations over the weekend.
  • On Friday, the state reported 1,237 new cases and 22 new deaths; on Saturday, the state reported 1,180 new cases of COVID-19 and ten new deaths; on Sunday, the state reported 1,033 new cases (with partial test results reported) and seven new deaths. Hospitalizations for COVID-19 crossed 500 as of Sunday.
  • The Navajo Nation reimposed a stay-at-home order and closed government offices, the Navajo Times reported. The cases also continued to grow on the Navajo Nation. Navajo Nation health officials reported 97 new cases and two more deaths on Friday, 172 new cases and no new deaths on Saturday and 117 new cases and four new deaths on Sunday.
